Japanese traditional food -MISO(2)

MISO is an essential ingredient for the Japanese(also Korea and China). But it is not well known in other country?Only connoisseurs of Japanese cuisine know much about it. But many people are familiar with soy sauce and soy milk these days. So, products made from soybeans are becoming very popular.So, if you explain that MISO is made from soybeans, they might feel closer to MISO.


MISO is used not only in MISO soup but also in many very different dishes. It's a really versatile ingredient. and it also goes well with French cuisine too.


My another favor MISO dish "MOROKYU", cucumber with MISO. It goes very well with beer.

Japanese traditional food –MISO(1)

MISO has been a mainstay of Japanese cooking for centuries, Used in recipes featuring all kinds of ingredients.
In the old days, MISO was often made at home. So the taste can vary not only from region to region but from one household to another. Since the end of the second world war Japanese eating habits have become westernized.
MISO is a fermented food, made from soybeans mixed with salt and the fermentation agent knows as KOJI, which is made from grains such as rice and barley or soybeans.
MISO is used in virtually every aspect of Japanese cooking. By far the most common use is in MISO soup. using MISO in place of butter ,creates a flavor better suited to Japanese palates.

Japanese traditional clothes –KIMONO, NISIJIN-ORI(2)

From around the 17Th century. these textiles began to be used more widely for women's clothing.

the name NIJIJIN-ORI originates from the time of the ONIN War(from this moment the SENGOKU JIDAI was start), in the 15th century. For 10 years, warring factions of SAMURAI split the capital into rival eastern and western sections. NISIJIN , literally"the western camp" was the main headquarters of the western forces. Because it was also the part of the city where the weavers were concentrated , textiles from this areas came to be called NISIJIN-ORI.


To produce NISIJIN-ORI textiles requires more than 20 separate processes. First, a sketch is made for the outline of the fabric design. Dyeing the threads before they are woven is one of the fundamental features of NISIJIN-ORI. because a countless number of different hues are created, it is possible to produce such beautiful designs with subtle color gradations. based on the design sketch. the dyed threads are woven to produce the fabric. the weave a single bolt of KIMONO fabric takes a tremendous amount of time. sometimes it progresses at a rate of just one centimeter per day. in this weaving method, the reverse side of the fabric is uppermost as the weaving is done. so the weaver has to use a mirror to inspect the progress. it is thanks to such superb workman ship , that NISIJIN-ORI continues to flourish as a mainstream traditional textile craft.

Japanese traditional clothes –KIMONO, NISIJIN-ORI(1)

the city of KYOTO is the birthplace of many traditional arts and crafts. they include the NISHIJIN-ORI woven textiles that are wildly used in the productions of KIMONO and OBI sashes.

NISHIJIN-ORI is designated as one of Japan's Traditional Crafts. It employs a variety of different weaving styles. This KIMONO fabric was woven in the style known as KARA-OIR which means Chinese weaving.

the technique originated in China, but was further refined in the NISIJIN area of KYOTO, and came to be used frequently for NO theater costumes. This is a patterned damask called DONSU. the elaborate way the warp and weft threads are interwoven produces beguiling motifs in the fabric.

Not only Japanese but also foreigners like to buy and wear some kind of kimono, especially women like to have a photo taken wearing a kimono, because the image of kimono really represents Japanese culture.  And there are various designs of KIMONO, I will show you some.
this a FURISODE, a long-sleeved KIMONO. the girl who before marriage can wear it. you can see many of them at the ADULT DAY( the first Sunday of January). after marriage the women should wear KOMON, and so on. well, most design of the KIMONO is the motifs feature seasonal birds, trees and flowers.

Japanese traditional clothes –KIMONO,YUZEN

KIMONO come in many styles, various techniques are used for dyeing the cloth. One of the most famous method is YUZEN.

the YUZEN dyeing process is named after MIYAZAKI YUZENSAI, who is an extremely popular fabric painter during the EDO period.

in the YUZEN method, colorful designs are painted directly on the fabric. because of their exquisite beauty , YUZEN KIMONO have remained popular throughout the centuries. at the end of the process, when the starch and the original outlines are washed out, the natural white colour of the fabric will be left visible. the white lines are the result of applying starch onto the fabric.

Japanese habit –TATAMI(2)

Underneath the surface mat is the inner core of the TATAMI. It is about 5.5 cm thick.
Traditionally, this is made entirely from rice straw, which offers the perfect degree of firmness, while allowing the air to pass through it.A TATAMI is made up of three components. The surface material, known as the TATAMI-OMOTE , the inner core TATAMI-DOKO, and the border material TATAMI-BERI.
most foreigners who come to Japan have a chance to experience tatami. And they're very important part of Japanese experience. But most people don't know much about their history and how they are made. there are increasingly fewer tatami rooms these days. But tatami have various good points. indeed, one thing is how their direction of the mats are laid affects the way light is reflected around the room.   Many foreigners have no idea about that kind of thing(not stepping or sitting on the borders of the mats). they often get it wrong in foreign movies about Japan.

Japanese habit –TATAMI(1)

A traditional Japanese house with the sunlight filtering gently through SHOJI screens and the floor covered with TATAMI mats. These borders also serve as a visual accent, when the TATAMI are laid out on the floor, Depending on the direction in which they are laid. TATAMI reflect the light differently.

Feeling the soft but firm texture of TATAMI evokes the sensation of walking barefoot on the grass.

Originally a symbol of power and prestige, TATAMI gradually became part of people’s daily lives.well, action! Stepping on the boarders came to be considered unrefined. So people began avoiding the edges of the TATAMI as they walked on them.

Japanese habit –bamboo

Bamboo is a really wonderful plant, very versatility. You can eat it, make plates and musical instruments and even fences from it. 

Another feature of bamboo is that it would hold liquids. There is some very simple but attractive bamboo sake cups which seem to draw out the taste of the sake, very cool. And I made a teapot shade bamboo several years (like the pic one, well no so perfect!). But I am not use it now…

to rather recently, there are lots foreigners who are negative towards BONSAI. Because they regard it as unnatural and even cruel to trees. But then I think many of them realize that BONSAI often live for long time. So, today it's a very popular hobby.

in Japan BONSAI used to be considered as a pastime only for seniors. But these days, it's becoming popular with young people too as a cute green hobby.

BONSAI can command prices of millions of yen , the highly prized BONSAI are valued as represented a world or huge universe in a small space . The idea of compacting nature into a small space it seen in many aspects of Japanese culture.

BONSAI, with an estimated one million enthusiasts, is particularly popular with the older generations.

Even people who do not have large gardens raise BONSAI on shelves in front of their house. Chatting about heir creations and sharing tips with their neighbors.

The most common type are pines. various techniques are used to shape seeding in small pots. so that they will gradually grow to resemble wild trees.

tokyo tower

The Tokyo tower provides a great view of Tokyo and Tokyo bay. But the tower itself is a beautiful landmark, especally illuminated at night "lights-out legend" is rather interesting because I would have thought a young couple, who were thinking about a happy future, would want to see the lights go on, rather than the lights go out.
