Because of its striking beauty and elegance, it's populaly known as the White Egret Castle. but in fact it was designed as an impregnable fortress. Himeji Castle is a National Treasure, and in 1993 it was placed on the UNESCO World Cultural Heritage List.

From the early 17Th century, a long period of peace was established. the castles were no longer used as military fortresses No fewer than 36 of the capital cities of Japan's 47 prefectures were originally castle towns.

Japanese traditional food –SUSI(3)

NIGIRI-SUSI, each portion consists of a bite-sized serving of vinegared rice and a topping. Usually, the NETA(topping) is some kind of seafood. many kinds of fish are served, both red and white, shrimp and squid, all kinds of shellfish... there are a tremendous variety of topping. in the jargon of the SUSI shop, the rice base for the SUSI is known as the SHARI.

the chef blends vinegar into streaming-hot, freshly cooked rice, using a paddle. it takes skill to mix the vinegar into the rice without crushing the individual grains. the sugars in the vinegar form a coating around each grain of rice. this stops them from becoming sticky and seals in the flavor.

For people in Japan, rice and fish are two of the primary pillars of the diet. served as SUSI, they have long been a favourite delicacy.
in ancient times, SUSI was a means of preserving food through a ferment process. new kinds of food were developed to match in the informal style of eating at food stalls. this was how NIGIRI-SUSI came into being. I will introduce you the NIGIRI-SUSI next time.

SUSI is my favorite Japanese food. And these days many people can enjoy SUSI overseas as well. So, many foreigners, when they come to Japan, are very eager to eat genuine SUSI.
Even I have heard that SUSI booms in foreign countries these days, I am not sure how popular is SUSI among foreigners,
However some foreigners confuse SUSI and SASIMISO, it's useful if you can explain basic points like the fact that SUSI always contains rice.

Japan is an island country blessed with the riches of its many rivers and the sea that surrounded it on all side. so the fish is very popular ingredient for Japanese foods.
One of the most popular grilled fish dishes is SANMANOSIOYAKI, SANMA just rubbed with salt and grilled whole. It is usually served with grated DAIKON radish, soy sauce and a citrus juice. SANMA is very chip in Autumn.
One of the classic ways to prepare the skip jack is a technique known as TATAKI. Fillets are lightly seared over a fire made from rice straw. The sliced fish is dipped in in a soy-based sauce seasoned with spices. Early summer is the season for KATSUO skip jack. You can enjoy distinctive seasonal fish and seafood delicacies such as SUSI, TEMPURA and hotpots.
Fishing techniques have been developed to suit each region and the king of target fish. The fisherman wield their rods so deftly that the fish are caught in the blink of an eye. It is centuries-old method of fishing that avoids causing any damage to the fish. Fish and seafood have been key parts of the Japanese diet since ancient times.

what is your identity? there is some one asked me. I wondered. what is my identity? I am I, yes, I am I. 
and If say I do not know, there is someone will say: Oh, so sad you are. I am sad? No, I live doing what I should do. I want do. I am very lucky to have the change of choice, which usually person can not get. maybe you will say I do not need the choice, then it is OK, but do not judge what I choose what I did. it is my life. I have experienced several culture. I will take advantage of them, that is my identity.
the person who asked me said"I am so sad that you did not take a deep contact with the people around". so sad? why? I do not know her well, NO! how could she judge me that I did not take deep contact with the others? what does she mean "deep contact"? just go someones home and have a dinner and say goodbye , it means the deep contact to her?
look, you have finite energy , where should you use it to? do not waste the energy! use it to happy , and useful things. you live for yourself , not the other. Of course, everyone knows this , but they(including me) forget it usually.

this OSIE is writing a famous scene of Japanese history.
it was about "YOSITUNE"(1159~1189, a genius general, strong at fighting none loose the war. but not good in politics , and finally killed by his own brother. a sadly genius ). and this scene is his lover SIZUKA (a famous dancer , SIRABYOSI ) dance in front of his enemies and sing like I am wating for you(means YOSITUNE). SIZUKA was be though very bravely from this scene.

probably most foreign visitors and residents enjoy visiting Japanese castles. They are very attractive historical structures and distinctly Japanese.
it's very interesting that many of Japanese castles were completely reconstructed during the twenty century. They just look old from their outside, of course, good point about that is that they are often fitted good lifts. So, we don't have to climb up older wooden stairs.
